Ingredients:
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk (or regular milk)
1/4 cup plain yogurt (optional)
1 large egg
2 tablespoons unsalted butter, melted
Cooking spray or additional butter for greasing the pan
INSTRUCTIONS:
- 1- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- 2- In a separate bowl, whisk together the buttermilk, yogurt (if using), egg, and melted butter until smooth.
- 3- Pour the wet ingredients into the dry ingredients and gently stir until just combined. It's okay if there are a few lumps in the batter; over-mixing can make the pancakes tough.
- 4- Preheat a non-stick skillet or griddle over medium heat. If using a regular pan, lightly grease it with cooking spray or butter to prevent sticking.
- 5- Ladle approximately 1/4 cup of batter onto the hot pan for each pancake. You can make them smaller or larger depending on your preferenc.
- 6- Cook the pancakes until bubbles form on the surface, then flip them with a spatula and cook for another 1-2 minutes, or until golden brown on both sides.
- 7- Remove the cooked pancakes from the pan and keep them warm. You can place them on a plate in a preheated oven at a low temperature (around 200°F or 95°C).
- 8-Repeat the process with the remaining batter until all the pancakes are cooked.
- Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruits, whipped cream, or chocolate chips.
