Ingredients:
2 ripe mangoes
1 cup mango juice (fresh or canned)
1 cup milk
1/2 cup sugar (adjust according to your taste)
1/4 cup water
1/4 cup cornstarch
Fresh mint leaves (for garnish, optional)
Instructions:
- 1- Peel the mangoes and remove the flesh. Place the mango flesh in a blender or food processor and blend until smooth. Set aside.
- 2- In a saucepan, combine the mango juice, milk, and sugar. Heat the mixture over medium heat, stirring occasionally, until it comes to a gentle boil.
- 3- In a separate bowl, dissolve the cornstarch in water, ensuring there are no lumps.
- 4- Slowly pour the cornstarch mixture into the saucepan, stirring continuously. Cook for another 1-2 minutes until the mixture thickens.
- 5- Remove the saucepan from the heat and let the mixture cool for a few minutes.
- 6-Add the blended mango puree to the saucepan and mix well until fully combined.
- Pour the mango pudding mixture into individual serving bowls or ramekins. Allow it to cool to room temperature, then refrigerate for at least 2-3 hours or until set.
- 7- Once the pudding is set, garnish with fresh mint leaves if desired.
- Serve chilled and enjoy your homemade mango pudding!
Note: You can also top the mango pudding with additional diced mangoes or a dollop of whipped cream for added flavor and presentation.
